Chocolate Chip Cookie Cupcakes

Yellow cake mix gets a delicious boost with this chocolatey creation!

What You’ll Need:

Cupcakes
• 1 box of yellow cake mix
• ½ package of vanilla pudding
• 1 cup mini chocolate chips
• 1 tsp. vanilla
• 3 eggs
• 1 cup water
• ½ cup oil
• 1 tbsp. chocolate syrup

Chocolate Filling
• 1 cup nutella
• 2/3 cup milk
• 1/3 cup chocolate chips
• 1/3 cup flour
• 1 tbsp. cocoa powder

Chocolate Frosting (from savorysweetlife.com, click here for the link)
• 2 sticks unsalted butter, softened
• 3 ½ cups powdered sugar
• ½ cup cocoa powder
• ½ tbsp. salt
• 1 tsp. almond extract
• 4 tbsp. milk

• cupcake pans
• cupcake liners

How To Do It:

1. Preheat oven to 350 degrees.

2. For cupcakes, place vanilla, water, eggs and oil in a mixing bowl. Whisk together.

3. Divide dry cake mix package into thirds. Sift in the mix and then stir into wet ingredients.

4. Add chocolate chips. Place cupcakes into pan and bake for 18 minutes.


5. While baking, make chocolate filling by heating a saucepan on medium. Add milk and nutella, whisk until smooth. Add in cocoa powder and then flour until thick. Let cool for 15 minutes.

6. Retrieve cupcakes from the oven. Wait at least an hour for them to cool before frosting.

7. Once cool, hollow out the top of cupcake with a knife. Add a dollop of cooled chocolate mixture inside.

8. Once this step is complete, follow the recipe for chocolate frosting and decorate cupcakes to your liking. I topped these with powdered sugar, more mini-chocolate chips and chocolate syrup.
