Salads can be pretty bland. Iceberg lettuce, shredded cheese, cherry tomatoes and some ranch dressing- gross. Here are a four new ways to put the flavor back into your lunch or dinner meal.

Southwestern Salad


What You’ll Need

  • 2 cups spinach
  • ½ cup black beans
  • ½ cup corn
  • ¼ cup peach salsa
  • Cabot sharp cheddar cheese

  • 2 cups spinach
  • ½ mango, diced
  • ½ apple, diced
  • ¼ cup carrots & yellow pepper
  • lemon vinaigrette

  • 1 cup spinach
  • 1 cup mixed greens
  • ½ cooked lentils
  • ½ red pepper
  • olive oil
  • salt and pepper to taste
